Not everything turns out as it should

Case in point number one: the gooseberry relish that is more like a jellyfied cement.

Case in point number two: the beginners lined zip bag which I initially managed to sew up so that the zip was firmly inside the bag and und reachable and therefore unusable. This has since been rectified, see above.

Case in point number three (no photo): the 20 jars of blackcurrant jelly that turned out as cordial.

Things I make frequently don't turn out the way I planned, or more accurately, imagined. I think it's important to document these things, not as failures, but in a structured way so that I don't make the same mistake again. In each instance, however, the mistakes I made were a) not reading the instructions all the way through and imagining that I knew what I was doing and b) making all these things when I didn't actually have the time to make them. 

So what have I learnt? Jams and jellies need to be boiled hard so it looks like a volcano spitting out lava, relishes should NOT be boiled hard and if halving all the other ingredients then also half the liquid and don't sew up every opening.
